Generally, most green
foliage will retain color best if its picked early in the year. When that's
not possible, try to get the younger and fresher leaves.
Later in the year when the
weather is cooler, just before autumn changes the colors of foliage, is a
good time to pick greenery. The biggest drawback to picking at this time of
year is that it's harder to find leaves that haven't suffered some type of
damage from weather or bugs or something.
Heat will damage the
chlorophyll in the leaves so try to avoid pressing greenery in the
microwave.
